Welcome to our new, rugged, warm home in Oudenburg. Willem Hiele is a restaurant where we live and cook in harmony with the rhythm of the seasons. Nature writes our menu: we serve one menu, with meat, fish and shellfish, the ingredients of the moment.
Both lunch (12 pm) and dinner (7 pm) start at a fixed arrival time, the beginning of a journey through the polders. Connection adds extra seasoning to our story. Our chefs will lead you across the fields, through the grass and reeds to the heart of our restaurant, the kitchen.

Because of the complexity and signature of our dishes, we can make only very limited adjustments to the menu. Unfortunately, we cannot offer lactose-free, vegetarian or vegan food, or a menu without fish or seafood. Sea, earth, polders and fire are embedded in the DNA of Willem Hiele.
